TOMATO & BEEF FRIED NOODLES
(Serves 4)
Ingredients
- 5 pcs. Chewy noodles cakes (Chinese Style)
- 240g beef (shredded)
- 200g tomato (cut into segments)
- 200g spinach (cut into serving sections)
- 1 small onion (sliced)
Seasonings for beef
- 1 tsp. oil
- 2 tsp. each corn flour, white vinegar, cooking wine
- 1 tsp. sugar
- 2 tsp. soy sauce
- salt & pepper
Sauce
- 1 cup of chicken stock
- 2 tsp. soy sauce
- 2 tsp .tomato purse
- 1 tsp. each sugar, sesame oil
- salt & pepper
Method
- Soak noodles in cold water for 10 minutes, rinse and drain
- Marinate shredded beef in seasonings
- Heat 2 tsp. oil in the wok, stir-fry onion, then add in tomato and cook for 2 minutes
- Stir in beef, add in spinach noodles and sauce
- Mix well and serve
