TOMATO & BEEF FRIED NOODLES

(Serves 4)

Ingredients

  • 5 pcs. Chewy noodles cakes (Chinese Style)
  • 240g beef (shredded)
  • 200g tomato (cut into segments)
  • 200g spinach (cut into serving sections)
  • 1 small onion (sliced)

Seasonings for beef

  • 1 tsp. oil
  • 2 tsp. each corn flour, white vinegar, cooking wine
  • 1 tsp. sugar
  • 2 tsp. soy sauce
  • salt & pepper

Sauce

  • 1 cup of chicken stock
  • 2 tsp. soy sauce
  • 2 tsp .tomato purse
  • 1 tsp. each sugar, sesame oil
  • salt & pepper

Method

  1. Soak noodles in cold water for 10 minutes, rinse and drain
  2. Marinate shredded beef in seasonings
  3. Heat 2 tsp. oil in the wok, stir-fry onion, then add in tomato and cook for 2 minutes
  4. Stir in beef, add in spinach noodles and sauce
  5. Mix well and serve
